This festival brings together expert cooks, passionate home chefs, and enthusiastic food lovers to celebrate and preserve age-old culinary craftsmanship.The Soul of Paa SaaAt the heart of this festival is Paa Saa, a unique raw fish soup that defines the Tai Khamti culinary identity. “Paa” means fish, and “Saa” means the mincing process. Freshly caught river fish is finely minced, mixed with handpicked herbs like uriam leaves, coriander, ginger, garlic, and wild greens, then served raw. Every bite carries the taste of the land and the wisdom of the tribe.The Tai Khamti people believe that food is sacred. Paa Saa is prepared only by Tai Khamti hands, using methods passed down for generations. It is a dish that demands precision, patience, and deep respect for nature.How the Festival Comes AliveNovember and December are considered the ideal months to prepare Paa Saa. During this time, both the local fish and herbs reach their peak flavor. The excitement builds as the finalists prepare their dishes in front of cheering crowds. Local singers perform throughout the event, their songs weaving stories of the tribe and their bond with nature.The Most Special Part — The JudgesUnlike modern food festivals where celebrity chefs decide the winner, here the judges are the true keepers of tradition. Five respected elders from the Tai Khamti tribe sit together to taste and judge the dishes. Their hands have pounded rice, caught fish, and prepared Paa Saa long before modern tools existed. In a world where professional judges often take the spotlight, here it is the elders who hold the power, reminding everyone that true expertise comes from experience and memory. Their decision is not based on presentation or technique but on how closely each dish holds to the authentic taste of their ancestors.Beyond Paa Saa — A Feast for Every Food LoverThe festival is not limited to Paa Saa alone. Visitors can taste Puchup, a rich chicken soup flavored with forest herbs, and Khaw-Puk, a sticky rice cake blended with black sesame.
